From garden to alpine pasture: Chez Pépé Nicolas products at Le Montagnard

Located only a few kilometres from one another, Le Montagnard in Saint-Martin-de-Belleville and Chez Pépé Nicolas at an altitude of 2,000 metres share much more than a family history: they share the same desire to showcase the flavours of our region.

This proximity allows us to work in close collaboration and to offer products at the restaurant that are grown, manufactured, and processed directly within our mountain environment.

A permaculture garden at the service of our plates

At the heart of the Chez Pépé Nicolas alpine pasture, the permaculture garden is a true source of inspiration for our kitchens.

Depending on the season, we find a selection of fresh vegetables, aromatic herbs, and edible flowers there, which bring freshness, colour, and character to the dishes at Le Montagnard.

Carefully cultivated, these products follow the rhythm of nature and allow our chefs to work as closely as possible with the seasons, using ingredients that have a real story.

From garden to plate, every element reflects our commitment to authentic cuisine that respects our environment.

Alpine pasture products: a shared expertise

At Chez Pépé Nicolas, the work on the alpine pasture also continues with the processing of dairy products.

We are fortunate to offer certain products at Le Montagnard that are made on-site, such as:

  • Alpine cheeses, crafted with milk from our goats and cows;
  • Sérac, a traditional Savoyard cheese made from whey, featured in our cannelloni;
  • Homemade ice creams, prepared with passion to extend the gourmet experience.

These products tell the story of our region and highlight an expertise passed down and developed through the generations.

A shared philosophy: promoting our mountains

Behind Le Montagnard and Chez Pépé Nicolas, there is a single ambition: to prioritise short supply chains, work with quality products, and create a direct link between producers, the kitchen, and customers.

This collaboration between our two establishments allows us to offer a coherent experience: that of a living, generous, and authentic mountain.

When you discover a dish at Le Montagnard accompanied by a garden vegetable, an aromatic herb, an edible flower, or an alpine cheese, you are also discovering a part of our history.

A family history, local and deeply rooted in the Belleville valley.
