Located only a few kilometres from one another, Le Montagnard<\/a> in Saint-Martin-de-Belleville<\/strong> and Chez P\u00e9p\u00e9 Nicolas at an altitude of 2,000 metres<\/strong> share much more than a family history: they share the same desire to showcase the flavours of our region.<\/p>\n\n

This proximity allows us to work in close collaboration and to offer products at the restaurant that are grown, manufactured, and processed directly within our mountain environment.<\/p>\n\n

A permaculture garden at the service of our plates<\/h3>\n\n

At the heart of the Chez P\u00e9p\u00e9 Nicolas alpine pasture, the permaculture garden is a true source of inspiration for our kitchens.<\/p>\n\n

Depending on the season, we find a selection of fresh vegetables, aromatic herbs, and edible flowers<\/strong><\/a> there, which bring freshness, colour, and character to the dishes at Le Montagnard.<\/p>\n\n

Carefully cultivated, these products follow the rhythm of nature and allow our chefs to work as closely as possible with the seasons, using ingredients that have a real story.<\/p>\n\n
